The Banana Harvest
All the patient waiting has paid off and we’ve finally harvested our first banana crop!
It’s been exciting waiting and watching the progress and a generous banana grower at our local markets supplied us with a handy banana bag to help keep the pesky possums and flying foxes at bay. However someone did move in unseen… rattle ant’s! They weren’t too happy that we were taking down their home, but we safely relocated them back to the nearby Paperbark tree. So use caution when you open your banana bag as you might well end up like us with ants dropping onto your head!
Now, what to do with all these bananas? I usually keep the ones that have over ripened, peel them and freeze them in a ziplock bag for later use. These are great for this recipe as they are lovely and mushy!!
Banana and Coconut Muffins Recipe
3 Cups Gluten Free Self-raising Flour (or buckwheat with 1 ½ teaspoons baking powder and ½ teaspoon salt for every cup)
2 Cups Desiccated Coconut
1 Cup Raw Honey
500ml Coconut Milk
2 Eggs
2 Tsp Vanilla Essence
3 Mashed Bananas
Combine the coconut and flour then add the milk, egg, vanilla and honey. Mix with an electric beater, and add the mashed banana until just combined.
Spoon the mix into a muffin tray and bake for around 25-30 mins at 180ºc or until cooked.
Let them cool and enjoy!
I ended up having excess mixture after filling the 12 cases so I just used a small cake tin for the remainder. It did need a little longer in the over though. Be sure to experiment with this recipe and make it your own. Your only limited to your own imagination so go bananas!

That’s a pity Chris as they are really tasty, I reckon if you could mix a bag of cement you could give this recipe a go 😛

So there you go, the rain dance seem to have helped and the lovely smell of wet soil is wafting through my window!
