‘Add Some More’ Pickling Cucumber Recipe

Pickling Cucumbers Cracker

I found this great recipe to help preserve our abundant cucumber crop. The good part is you can keep adding cucumber slices to the brine as you harvest over an extended period. Crispy cucumbers all year round! Did I mention they’re absolutely delicious?

2 Medium cucumbers (thinly sliced)
1 Medium onion (finely sliced)
3 Tablespoons sea salt
1 Teaspoon pickling spice
500ml Vinegar
100g Sugar (I used about 80g, you can add more or less to suit your taste)

Slice the cucumbers thinly (on angle if you want bigger pieces) and spoon the salt over top, leave this for around 1-2 hours.

Dry them off with paper towel and place them into sterilized jars with the onion (I filled 2x700ml jars from of this recipe).

Pour the vinegar into a saucepan with the sugar and warm it slowly until it is completely disolved.

Add the pickling spice then pour into the jar and fill until all the cucumbers are covered.
Let it cool, place the lid on and pop them into the fridge.
They will need about a week before they are ready and can last quite long, however we usually finish them off pretty quick!
Keep adding more cucumber slices as the harvest comes in!

** You can add other vegetables if you like or change the cucumbers for something else that is growing in your garden!
