Farm Fresh Tomato Sauce Recipe

This is an easy way to use your tomatoes straight from the garden and it’s also a great addition to the pantry! The flavours take us back to the farm kitchen every time.

Tomato Sauce Scoop

The recipe was originally tailored for an agricultural 3 kg of tomatoes, however this slightly scaled down recipe is just about enough to fill 2 medium jars.

1 kg Ripe tomatoes
1 Large onion

Process these together until minced and cook in a large pot for a few minutes.

250ml Vinegar
200g Raw sugar
1/3 Tablespoon sea salt
1 Garlic clove
1/2 Tablespoon whole peppercorns
1 Deseeded cayenne pepper (or 1 teaspoon powder)

Add the rest of the ingredients to the tomato and onion mix and cook until slightly thick.

Combine 1/2 tablespoon cornstarch and 1 small bottle of tomato sauce/paste.
Add this to the mixture and keep simmering until the desired thickness is reached.

Add more salt to taste and remove the peppercorns if desired.

Scoop the sauce into sterilized jars while still hot and screw the lids on straight away.

Leave to cool before storing and once opened remember to refrigerate.

Paprika
Whole cloves
Coriander
Extra Chilli
